docs: Add object w/ subcategories as span operation

DESCRIBE YOUR PR

Adding object as span operation including the subcategories. The subcategories are for now supporting S3 and R2 operations.

• For S3 I took them from the OTel aws.s3.key attribute: https://opentelemetry.io/docs/specs/semconv/object-stores/s3/
• And for Cloudflare R2 is directly from the source: https://github.com/cloudflare/workerd/blob/e98456a5266695dbf1e1b3bd401a130c98b32641/types/generated-snapshot/latest/index.d.ts#L2440-L2480 (the subset is way smaller than S3)
